Priority violations:

• Demonstration of knowledge of food safety evident.

• Employees not washing hands prior to putting on gloves and handling donuts. Owner came in from outside and did not wash hands prior to putting on gloves and handling donuts.

• Discontinue sale and use of all foods from unapproved sources. Kolaches are being made at another store that is not authorized to make and sell meat products to this location. Discontinue serving Kolaches or other meat and egg products. All products must be made in an approved location and in an approved method.

• Time log is not accurate. No time marked for the batch of Kolaches at the time of inspection. Log indicated on other days some Kolaches arrived after the four-hour time limit allowed to serve the item. No indication the items were disposed of.

Nonpriority violations:

• Floor tiles are coming unglued. Floor surface is no longer easily cleanable.

• Handwashing sink is not draining. Repair as needed.

Priority violations:

• Demonstration of knowledge of food safety evident throughout the facility or by appropriate responses and actions.

• Employee handled ready-to-eat foods with bare hands.

• A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Bowl of raw chicken stored in the handwashing sink. Corrected.

• Carton of raw eggs stored above ready-to-eat foods in cooler.

• Sanitizer is not strong enough. Should be 50-100 ppm.

• Rice is not at 41°F or below.

• Items not date marked as needed.

Nonpriority violations:

• Using cardboard on the floor around the fryer and under microwave cart. Cardboard is saturated with grease. Remove.

• Excessive grease and food debris build-up on, around and under fryer, stove and grill.

• Excessive food and grease build-up on the stove burners.

• Accumulation of food and grease build-up on and around microwave ovens.

• Interior and exterior of the white refrigerator is not clean.

• Employees using food storage/prep area as a break area. Children are not allowed in a food preparation or food storage area.
