Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Critical violations: Employee beverages were stored on the top of a cold holding unit and personal items were stored on the shelf above clean utensils; employees must store drinks and personal items away from or below food and clean utensils. Items were not date marked as needed. The solution for wiping cloths was not strong enough.

Noncritical violations: Container used to store croutons needs to be replaced. A shelf in the walk-in has rusted and needs to be repaired or replaced. There are condensation leaks in the walk-in cooler and freezer, repeat violation.
