• Employees did not wash hands prior to putting on gloves. Corrected.
• Time log for items on salad bar using time as a control is not complete.
Nonpriority violations:
• Back-up thermometer in walk-in and salad cooler do not appear accurate. Replace if needed.
• Dishwasher does not maintain wash or rinse temperature through multiple cycles as it should. Contact a professional company or repair person to repair machine. On-going issue.
