Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Critical violations: Food items were not reheated to 165 degrees. The walk-in was not holding foods at 41 degrees or below. Bleach in a sanitizer bucket exceeded 200 ppm.

Noncritical violations: No test strips were available to check the bleach concentration or Purell brand sanitizer in a spray bottle.

Critical violations: Exterior of containers for sugar and salt need cleaning or replacement. Veggie burgers in the front refrigerator were not at 41 degrees or below.

Noncritical violations: Containers used for salt and sugar are considered single-use containers and are not designed to be washed and sanitized multiple times. Shelf in the walk-in cooler has water dripping onto it and is no longer cleanable or in good condition. Condensation is leaking in the freezer and there is an ice build-up on the shelf below.

Noncritical violations: Stored frostings were not covered. The posted permit is expired.

The Wooden Spoon

Critical violations: Some employees were not lathering with soap long enough before rinsing their hands. Some food items in cold holding were not at 41 degrees or below. Not all food items were date marked as needed.

Noncritical violations: Shredded chicken was not being thawed in accordance with established procedures. Paint and drywall at the bottom of the server's station need repair.
